Iker \u00e8 un giovane allevatore (22 anni) e produttore di formaggio, che porta avanti l&#8217;attivit\u00e0 dei suoi genitori. Il suo sistema di allevamento ovino si basa sul pascolo intorno all&#8217;azienda in primavera, ma anche sui pascoli montani comunali di Aralar, il parco naturale dove produce anche formaggio durante l&#8217;estate. Le nascite degli agnelli iniziano a ottobre e gli agnelli vengono venduti principalmente per Natale. Tutta la sua produzione di formaggio \u00e8 certificata nell&#8217;ambito della DOP Idiazabal, e la produzione trasformata sui pascoli montani \u00e8 specialmente differenziata come \u201cformaggio di montagna\u201d. Iker ha deciso di aderire al progetto LIFE Green Sheep per aumentare l&#8217;efficienza. \u00c8 consigliato dalla cooperativa Lurginza. Sono state identificate due azioni principali: migliorare l&#8217;efficienza dei concentrati utilizzati modificando la formula e migliorare la genetica attraverso il programma di allevamento delle pecore Latxa.
